
Colazione all’americana – American breakfast skillet
My twist on a classic American breakfast made with super nutritious sweet potatoes.
Equipment
- cutting board
- knife
- large cast iron skillet
- mixing bowl
- cheese grater
Ingredients
- 2 yams I used an orange sweet potato and a purple one
- 7 oz smoked sausage I used smoked kielbasa
- 4 eggs
- 1 cup aged cheddar cheese grated or shredded
- 1 bell pepper
- 4 green onions
- 1 tbsp oregano
- 1 tbsp thyme
- salt and pepper to taste
- 2 tbsp oil I used grapesees oil
- 1/2 cup water
Instructions
- Gather your ingredients
- Preheat the skillet with the oil; meanwhile wash the vegetables; cut the yams into 1/2 inch cubes; drop them in the skillet with the water and cook them till soft but not mushy at medium heat.2 yams, 2 tbsp oil, 1/2 cup water
- While the sweet potatoes cook, cut the sausage and bell pepper into 1/2 inch chunks; add to the skillet; season with the herbs, salt and pepper.7 oz smoked sausage, 1 bell pepper, 1 tbsp oregano, 1 tbsp thyme, salt and pepper to taste
- While the ingredients cook, slice the green onion and set aside; shred the cheese.4 green onions, 1 cup aged cheddar cheese
- Once the ingredients are almost done cooking, make 4 indentations and drop one egg in each; season with salt and pepper; add the cheese and green onions and cook the eggs until desired doness.4 eggs

Ever since I came to the United States in 1998, I always enjoyed a hearty, savory breakfast. I make this skillet often as my family loves sweet potatoes and all the other ingredients combined and cooked into a complete meal, perfect to get the day started.
