Holiday brussels sprouts

A very unique salad that combines the freshness of the brussels sprouts, crunchy and sweet walnuts, tangy dried cranberries and a mustard dressing.

Ingredients

  • 2 cups brussels sprouts
  • 1/4 cup candied walnuts
  • 1/4 cup dried cranberries
  • 3 tbsp grapeseed oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp spicy brown mustard
  • salt and pepper to taste

Instructions

  • Gather your ingredients.
    The 3 main ingredients gathered on a table.
  • Wash the brussels sprouts and finely shred them; place in a mixing bowl and set aside.

  • Roughly chop the candied walnuts and toss with the brussels sprouts; add the cranberries; mix to combine.
    1/4 cup candied walnuts, 1/4 cup dried cranberries
    Chopped nuts and cranberries added to the vegetables.
  • In a mason jar, add the mustard, apple cider vinegar, salt, pepper and oil; shake well to emulsify; toss with the salad and serve. The salad will preserve in an airtight container in the fridge for up to 2 days.
