Classic noodle soup or pastina in brodo starts with cold water, and the water temperature is very important because it will determine how flavorful your broth will be.
As my mom always said: if you want flavorful broth, you start with cold water and if you want flavorful meat (for the classic boiled meat, that is a staple recipe during the winter) then you start with hot water, which will allow for the meat to create a seal and retain the flavor and juices.
