Gorgonzola, mascarpone and pear tarte

  • cookie sheet x 2 (or a large one)
  • parchment paper

Ingredients

  • 2 puff pastry sheets thawed out
  • 3 pears thinly sliced, lenghtwise
  • 8 oz mascarpone cheese
  • 6 oz gorgonzola cheese
  • 4 tbsp honey for drizzling
  • 1 tsp thyme
  • 2 tbsp flour for dusting
  • 1/4 cup walnuts halved

Instructions

  • Gather your ingredients.
  • Remove the puff pastry sheets from the freezer and thaw out overnight in the fridge or on the counter for a few hours. Preheat the oven at 400 degrees and on a baking mat open the puff pastry, dust the baking mat with flour and roll the dough thin.
    2 puff pastry sheets, 2 tbsp flour
  • Place the pastry on the baking sheets layered with parchment paper; using a sharp knife, slice half of each pear in half and then slice them lengthwise.
    3 pears
  • Top the pastry with dollops of the cheeses; then gently lay the pear slices as like the photo. Scatter the walnuts and sprinkle some thyme, drizzle some honey.
    8 oz mascarpone cheese, 6 oz gorgonzola cheese, 4 tbsp honey, 1/4 cup walnuts, 1 tsp thyme
  • Place in the oven and cook for about 15 minutes. Cool before cutting.
