Dark cherry dutch baby

An elegant and decadent yet simple breakfast that will satisfy the whole family

  • Cast iron skillet
  • Blender


  • 1/2 cup unbleached all purpose flour
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 3 eggs at room temperature
  • 3/4 cups whole milk at room temperature
  • 1/2 tsp vanilla extract
  • 3 tbsp unsalted butter, soften
  • 1 cup frozen dark cherries, thawed or fresh cherries
  • powdered sugar for dusting


  • Gather your ingredients. Ensure the eggs, milk and butter are at room temperature.
  • Preheat the oven at 425 degrees. Place a large cast iron skillet in the oven to heat.
  • In a blender, combine the wet ingredients (eggs, milk, vanilla) and blend for a few seconds. Add the flour, sugar and salt and blend for about 1 minute.

  • Remove the hot skillet and add the butter allowing to melt and start sizzling.
    3 tbsp unsalted butter, soften
  • Add the liquid mixture and drop the cherries laying them evenly on the pancake.
    1 cup frozen dark cherries, thawed
  • Bake until the dutch baby is golden and the edges are crisp. This will take about 18 minutes.
  • Remove from the oven and serve hot with a dusting of powdered sugar.
